My 9 Favorite Recipes from 2019

Happy Monday everyone!  It's my final week of work for the year (slash decade) and I'm pumped!  It's been a hectic, roller-coaster of a year, so I'm excited to see what 2020 has to bring.

In my second post recapping the year (check out my favorite purchases here), I'm sharing my favorite recipes that I tried out.  I love to cook, and these ones took the cake!


Carrot Lox

Time-intensive, but the taste and texture is SO close to smoked salmon for a fraction of the price and is vegan!
Skill level- intermediate
Prep time- 10 minutes
Cook time- 1.5 hours + 2 hours marinating


No Knead Bread

Super easy method to cook bread, and it turns out delicious every time.
Skill level- a little more than beginner
Prep time- overnight
Cook time- 1 hour


Best Ever Veggie Burger

I make this in huge batches and freeze them.  They are really delicious and better than any store-bought burger.  Even better if you top with this sauce!
Skill level- advanced
Prep time- 20 minutes
Cook time- 30 minutes (in oven- my preferred method) or 10 minutes (on stove)


Bang Bang Tofu

Great taste and texture- good for meal prep too when served with rice and veggies.
Skill level- intermediate
Prep time- 20 minutes
Cook time- 10 minutes


Avocado Salad

Interesting combination that's great for a breakfast or a snack between meals.
Skill level- beginner
Prep time- 5 minutes or less
Cook time- none


Campfire Nachos

The best food to make while camping!  Delicious and easy, and you can customize with any ingredients you like.
Skill level- beginner
Prep time- 5 minutes
Cook time- 10 minutes (or longer, depending on your fire)


Elote Corn Dip

My go-to dip to bring to parties.  Everyone loves this and it's a breeze to put together.
Skill level- beginner
Prep time- 5 minutes
Cook time- 10 minutes


Crunch Wraps

Easy weekday meal that tastes better than Taco Bell's and can also be customized to your taste.  I like mine with Jackfruit or refried beans, and ALL the toppings.
Skill level- intermediate
Prep time- depends on toppings used
Cook time- 5 minutes each


Eggplant Parmesan

I honestly only made this once because it was so labor-intensive, but I'm still dreaming about how amazing it was.  Need to make again!
Skill level- advanced
Prep time- 2 hours (mostly hands off)
Cook time- 2.5 hours for sauce + 1.5 hours
